We haven't written anything on our blog page for ages! We've been flat out with Christmas coming up - there's always a mad rush to 'get everything done by Christmas!!' This week we went for a glorious walk in the New Forest and gathered chestnuts to make chestnut stuffing. They were certainly plentiful and we followed the country rule of taking a few chestnuts from beneath random trees along our walk. Here's the recipe I use, absolutely delicious!
Method: To prepare chestnuts - I slice each chestnut with a sharp knife and bake on a baking sheet, they're much easier to peel when cooked. Chop them to taste - I like them chopped coarsley to provide a different texture to the other stuffings served on Christmas day. Heat the oil and fry a chopped onion and the bacon, add the butter, garlic and chestnuts and cook for a couple of minutes. Stir in the other ingredients and season. Bake in a baking tray until golden brown. |
